Gluten is a family of proteins found in grains like wheat, rye, and barley, and Celiac disease is an immune response against these proteins, and most people with Celiac disease never know that they have it. The damage to your intestine is very slow, and symptoms are so varied that it can take years to get a diagnosis.
People with Gluten intolerance may have some of the same symptoms and may want to avoid gluten. But they don’t have an immune response or damage to the small intestine as with Celiac disease.
A blood test and upper endoscopy can help confirm the diagnosis.
